Natalie from The Mindful Mocktail loves this combo of sweet raspberries, fresh mint and sour lime.
If you have fresh raspberries that are in season, they might be sweet enough, so you might find you don’t need to add any sweetener to this at all.
This is a super quick mocktail which can be made in a glass and also would be a perfect drink to save for Christmas because of the gorgeous red and green colours.
Ingredients
8 raspberries
1 lime, quartered
8-10 mint leaves
1 tsp sweetener of choice (opt)
Sparkling water
Methods
Place raspberries, lime, mint and sweetener (if using) into a glass.
Muddle together for about 1 minute to release the juice from the lime and raspberries, and the flavour from the mint. If you don’t have a muddler, the back of a wooden spoon or a soup spoon works well.
Top with sparkling water and stir gently.
Add ice and garnish.
Serve.
Tips
Natalie also tried this with frozen raspberries, and it does work – just make sure they are defrosted first! She found the fresh to be slightly better, and sweeter.
If you are making for a crowd, you can muddle prior to guests arriving, then leave the glasses on a tray in the fridge ready to top with sparkling water and ice when you are ready to serve.
