1 Red Pepper
½ Red Onion
1 piece of Tofu (diced)
1 tbsp. Chipotle Chilli
2 Tsp. Paprika
2 Tbsp. Maple Syrup
Pepper and Salt
1 Dice Avocado
Handful of diced cherry tomatoes
½ Red Onion

- Preheat your oven to 200°C
In a bowl, combine the lime, maple syrup, paprika, chipotle and add the tofu. Ensure all the tofu is covered. If you’re able to prepare in advance, allow your tofu to marinate in the fridge overnight, to enrich the flavours.
Grab your tray and splash a bit of oil and cook your marinated tofu until the edges have gone crisp (roughly 20 minutes).
- Finely slice your red pepper and onion and quickly fry them in a little oil with sea salt, pepper and a teaspoon of paprika until charred. Set aside until the tofu’s cooked.
- While your tofu is cooking, fry up your red pepper and onion in a dash of oil and a pinch of sea salt, pepper and a teaspoon of paprika. Once fried, set aside and make your Avocado Salsa.
Once your Tofu is cooked, pop your tortilla wraps in the oven to golden.
Once you have all your ingredients, it’s time to assemble. Pop a tortilla wrap on a plate, your fried peppers, salsa and finish off with a drizzle of lime.
- If you have some left over tortilla wrap (cut into triangles chips) and dip into your remaining salsa.
